Baklava
Ingredients:
1 package of Yufka dough
4oo grams of mixed nuts
(including almond, walnut, haselnut and pistachio )
125 grams of butter
125 grams of clarified butter
3 egg whites
a pinch of salt
100 grams of sugar
cinnamon
vanilla extract
2 cups of sugar
1 cup of water
lemon juice
rosewater
Preparation:
1.Bring the sugar and water to the boil and let it simmer for about ten minutes. Then add a dash of lemon juice and rosewater and put it to aside to cool.
2. Seperate the egg white from the egg yolk.
3. Add the pinch of salt to the egg white and whip it until it is stiff.
4. Put the nuts, the sugar, a dash of cinnamon and vanilla into a blender and blend it.
5.Add the nut mixture to the egg white and fold it in.
6. Melt the butter and the clarified butter.
7. Place one layer of the Yufka dough onto your baking tray and brush some of the butter mixture on it. Continue this with four more layers of the dough.
8. Then put the whole nut mixture on the layers of dough and put another layer of Yufka dough on it.
9. Continue this with six more layers of Yufka dough, while always brushing butter on it. In the end you should have 5 layers at the bottom and 7 layers on top of it. You should also put something of the butter mixture on the edges of the last layer.
10. Cut lozenges into the last layers of dough and put it in the oven at 150 degrees Celsius for about thirty minutes until the Baklava has become golden brown.
11. Take it out of the oven and directly pour over the sugar sirup you've prepared before.
Place it on a nice plate and enjoy !
